Recipes

Kelly is doing a post today on favorite main dish recipes. I love this idea! I love to share my recipes and I love to try new recipes - I tried three new ones last week. I keep a lot of recipes on my Recipe Blog and a couple of my favorite main dish recipes I have there are lasagna and chicken enchiladas. But here are a couple of our favorites that are less casserole-like:


Coffee, Chili and Cumin Mignon

2 T cumin
2 T finely ground coffee
2 t ancho chile powder
1 T paprika
1 T salt
2 t pepper
2 lbs filet mignon, trimmed

1. In a small bowl, combine all spices. Roll filet in spice. Set aside at room temperature for about 1 hour.


2. Preheat oven to 375. Roast beef 25 minutes for medium rare, or until center registers 125 on a meat thermometer.


3. Let rest 10 minutes before serving.



This is a really good steak rub. We have gotten a lot of compliments on it. It is easy to make up a large batch and save it.


Sweet-Spicy Glazed Salmon

3 T dark brown sugar
1 T soy sauce
4 t hot mustard
1 t rice vinegar
4 (6 oz) salmon fillets
¼ t salt
¼ t pepper

1. Combine 1st 4 ingredients in a saucepan; bring to a boil. Remove from heat.


2. Place fish on foil-lined jelly roll pan coated w/cooking spray; sprinkle with salt and pepper.


3. Bake at 425 for 12 min. Remove from oven.


4. Preheat broiler. Brush sugar mixture evenly over salmon; broil 3 inches from heat 3 minutes or until fish flakes easily with a fork.
